Interest in coconut flour has been surging in recent months thanks to the paleo diet-inspired book by Dr Tim Noakes and colleagues, The Real Meal Revolution (it’s sold over 100 000 copies in SA). You can replace up to 10-20% of the flour called for in recipes with coconut flour, adding an equivalent amount of additional liquid to the recipe. This gluten-free flour is high in fibre but low in carbohydrates. It is low GI and a great flour substitute for gluten-free baked goods.
Coconut flour tends to be drier than ordinary flour, so you may need to use more liquids in your recipe.
